Waitrose Homity Pie

1 x 250g block Waitrose Cooks' Ingredients All Butter Shortcrust Pastry, thawed
350g essential Waitrose Potatoes, peeled and cubed
2 tbsp essential Waitrose Olive Oil
25g essential Waitrose Unsalted Dairy Butter
4 essential Waitrose Onions, sliced
½ x 25g pack Cooks' Ingredients Curly Leaf Parsley, roughly chopped
2 tbsp essential Waitrose Semi Skimmed Milk
½ tbsp mustard powder
100g essential Waitrose English Mature Cheddar, grated


Preheat the oven to 200°C, gas mark 6. Roll out the pastry and line a 22cm diameter, deep flan case. Place the potatoes into a pan of cold water and bring to the boil, then simmer for 10 minutes or until tender.
Meanwhile, heat the oil with the butter in a large frying pan and fry the sliced onion until just golden. Add the drained potato. Continue frying until the potato takes on colour, add the chopped parsley with the milk, mustard powder and grated Cheddar, reserving a little to sprinkle on top. Combine all the ingredients and pour into the flan case, then sprinkle over the remaining cheese.
Bake for 25–30 minutes or until pastry is cooked and the filling is golden. Serve with Waitrose Caramelised Red Onion Chutney and green beans.
